The menu
Everything is smoked over post oak and served on butcher paper with pickles, onions and white bread. Meats by the half-pound, sliced to order. Prices vary a little by location.

Sold by the half-pound unless noted. Brisket is cut to order: lean, fatty or both.
BrisketFourteen hours over post oak. Salt, pepper, patience.
$16Burnt endsBrisket point, cubed and sent back to the pit. Weekends only.
$17Pork ribsSt. Louis cut, dry rubbed, glazed in the last hour. Also by the bone or full rack.
$14Beef ribOne giant bone, roughly a pound and a half. Fridays and Saturdays.

Collard greensCooked down with smoked turkey neck.

Banana puddingVanilla wafers, real bananas, made that morning.
